From the union between two typical products of our Calabrese tradition, the milk of Monte Poro and red chilli pepper, a unique product is born, that is a good symbol of our strong and determined character. Prometeo is a cheese with spicy red chilli pepper, derived from the processing of milk pasteurized at 72° c. After the milk enzymes and rennet have been added, the curd is broken into grains, then put into moulds and turned over to give uniformity to the rind. The cheese is brought into the steaming room for about three hours and then transferred to the drying room. The red chilli pepper mixed with the curd is homogeneous and uniform inside the product. Its rugged rind has a basket weave pattern, and is cylinder shaped.
